In The Cellar
Our Steenberg Ruby Rosé is made from Syrah. The Syrah grapes hail from multiple blocks from our farm in Constantia. The grapes were hand-picked at an average of 22 degrees balling in the early morning in mid-February. They were whole-bunch pressed with a champagne pressing cycle to extract a pale and delicate juice.
The Syrah juices were fermented separately. Fermentation took place in stainless steel tanks to retain freshness and protect the primary characteristics of the varietal. The juices were inoculated with neutral yeast strains and underwent a cool fermentation (13-15°C) for about 21 days.
The wine underwent a light fining and was bottled in mid-May 2023.

Previously known as Rattlesnake Sauvignon Blanc.
Both terroir and treatment are immediately evident in the glass. A resonance of dill, capers, greengage, and wet granite marry on both the nose and palate. Acidity and spice form the backbone, dominating on the palate, while a pithy yet creamy texture rounds out the overall mouthfeel. The textured, juicy palate shows citrus zest, vanilla and apricot. A lingering herbaceous and mineral finish completes the experience. This wine will be enhanced by a food pairing such as shellfish, or a Thai curry accented by ginger and lemongrass. Drink now, but wait five to seven years for a truly evolved experience.

Our pale pink 1682 Pinot Noir Cap Classique is fresh with fruity aromas of raspberry jelly, wild strawberry sorbet, red apple skin and toasted brioche. The wine has a very fine mousse that lifts the raspberry-like aromas and is balanced well with a creamy texture and bright acidity with a lingering dry finish. Enjoy in its youth or cellar for
3 to 5 years to promote a more savoury flavour development.
